Summer Salad

What a glorious week it has been. My first experience of + 30 ºC in Brussels and I hear the heatwave is treating most of us in Northern Europe to a summer *finally*.

The hot-weather always throws me on what to eat as always I crave the more heavier dishes in life – pasta and pizza (and nachos) – at every meal. Really not heatwave appropriate. If the heat doesn’t send you to sleep, carbs certainly will.

As is becoming a bit of a habit now, I took to Pinterest, with a taste for deliciously salty halloumi in mind I searched for summer inspired halloumi salads. Pinching different ideas from various recipes I put together this Summer Salad.


The Ingredients

Salad leaves (a handful for each person)

1 handful of baby asparagus

Olive oil, a dribble

Balsamic vinegar, a dribble

1 red onion, finely chopped

1 courgette, thinly sliced

2 peaches, sliced

1 handful of cherry tomatoes, halved

1 packet of halloumi, sliced

The Method

I mean, it could not be more simple, boil the asparagus for 4 minutes, drain and leave to cool. Fry each of the following ingredients (listed above) and leave to cool. Place bed of salad on large serving dish and top as you desire with the cooled ingredients. Drizzle in olive oil and balsamic vinegar and serve.

I cannot praise more whoever discovered the perfect relationship of peach and halloumi. Its a sweet and salt paradise. A dream salad pairing.
